Recipe

Vince doesn’t like soup in the summer, but I do.  He says' it’s too hot.  I like soup because it doesn’t make my stomach heavy during an active day, but it’ll fill me.  This is one of my favorite soups.  And it’s an original recipe, created by me.

 

Asparagus Crab Cream Cheese Chowder

1/2 red onion

2 clove garlic

olive oil

1 cup crab

4 cups chicken broth

1 pkg cream chease

2 cups 1” pieces asparagus

1 teaspoon parsley or 1/2 teaspoon dill

salt and pepper

Saute onion, garlic and crab in olive oil.  Add broth until hot.  Add asparagus and cook until just crisp (before it turns soft).  Chop cream cheese in cubes and mix in broth until melted.  Add remaining ingredients.  Simmer to warm seasonings and serve.  This is best with toasted crackers topped with Chevre.  You might try a dash of tobasco in the soup, too.

It’s a simple recipe, but very delicious.  Tell me what you think.

this sounds great!!!! Although I don't do crab - I DO have the fake crab stuff and intend to make some this week - with asparagus from my own garden! :P You always were a good and an inventive cook
